Crawfish Grits Croquettes with creole mustard foam and green onion "dust"

Back in March Joe from Foodie NYC had a Small bite contest for a small bite / tapas tasting menu he would be doing. One of the dishes I made for Mardi Gras two years ago was a crawfish grit "hush puppy". I though that it would make a good appetizer/tapas for Joe's menu, a little different for New York but still accessible.

Crawfish Grit Croquettes with creole mustard foam and green onion "dust"
1 box of quick grits
1 package crawfish tails
cajun seasoning
cheese of choice ( I prefer cheddar or monterey jack)
bread crumbs
eggs and milk
garlic
onions
creole mustard
mayo
hot sauce
green onions
oil for frying
Prepare the grits per directions on the box but instead of water use 1/2 chicken stock and 1/2 milk,
when grits are done stir in 8oz of shredded cheese of choice.
Saute 1/4 cup of chopped onion and 3 chopped garlic cloves in oil and butter.
Chop crawfish tails into rough dice. Add to onion mixture and saute with cajun seasoning for 5 minutes just to marry the flavors.
Stir into grits mixture. When some hat cool scoop out portions and roll into balls. Place in fridge for 30 minutes.
Dip balls into eggwash mixture and coat with bread crumbs. Fry at 350 till golden brown.
Mix equal parts creole mustard and mayo and a dash of hot sauce or two or twenty depending on taste.
Thin out with hot water and foam with an immersion blender.
Place green onions in a food dehydrator and when done crumble into a  fine powder.
Garnish away.
Okay I am horrible at writing recipes so let me know if you have any questions.
I didn't win and I demanded a recount :) but to no avail............ Still a winner in my book.

Don't despair... something including grits and crawfish.. that's like alien food for New Yorkers! These look great and I can sometimes get crawfish at Harris Teeter, s I will give them a try(and the sauce and garnish looks very nice!)

I miss this kind of food so badly. How interesting that I have green onions in the dehydrator at this very moment awaiting their moment to be turned into dust. You are very quick at things.

These croquettes look absolutely divine! I'd love to taste them right now. Beautiful display of colour and textures
